Shaved Brussel Sprouts with Poppy Seed Dressing

Ingredients:

Poppy Seed Dressing:

½ cup fresh lemon juice

2 Tbs. sugar or sugar substitute

1 t. Dijon mustard

4 Tbs. extra virgin olive oil

2 Tbs. apple cider vinegar

1 Tbs. poppy seeds

salt and pepper to taste

Salad:

4 cups brussel sprouts, cleaned and trimmed

½ cup green apple, chopped

¼ cup Red Onion

¼ cup dried cranberries

¼ cup walnuts

¼ cup pumpkin seeds

¼ sunflower seeds

½ cup crumbled feta

Directions:

 

  1. Dressing: Combine all dressing ingredients, except poppy seeds. Mix in a blender until smooth. Stir in poppy seeds.

 

  1. Salad: Shave brussel sprouts and red onion in food processor or slice thinly. Chop green apple. In a large bowl, combine brussel sprouts, red onion, and apple. Pour dressing over salad, store in the refrigerator, and allow to marinate for 2-4 hours.
  1. When ready to serve, top with cranberries, seeds, walnuts, and feta.
